Recipe: Basil pesto loaf

Basil Pesto LoafI wanted to try a pesto bread, and I used my homemade pesto, with the last basil harvest.

I hoped for a green bread, but the millet flour become brown when cooked. But it's okay: the pesto can't be seen but it can be tasted!

This loaf was perfect with cheese, tuna oil and also my chili jam.

Basil Pesto Loaf

Basil Pesto Loaf

150g millet flour
150g all purpose flour
7g dry yeast
1 tsp baking soda
1 tbsp sugar
1 tsp salt
150g basil pesto
120ml milk

Mix the two flours, sugar, salt and baking soda, and then add the basil pesto.
Dissolve the yeast in some spoonfuls of warm milk and add to mixture.
Add milk and mix well.

Pesto LoafShape into a loaf and let rise for an hour and a half.
Bake in preheated 180° C (356 F) oven 30 minutes.
