Omelettes and egg recipes with herbs

This dish was prepared during a visit to my in-laws, and it uses ingredients from their kitchen garden: tomatoes, potates, courgettes and aromatic herbs... even the eggs are from their hens.
This is a Cuore di Bue (ox heart) tomato: big tomatoes with thick flesh, sweet and soft, perfect to be fried.
Fried green tomatoes
Cut the green tomatoes into thick slices 1 cm or so.
Put in beaten egg, and then in breadcrumbs.
Fry in hot oil until they are golden on both sides.
Herbs omelette
Beat two eggs with chopped mint, fresh basil and rosemary.
Fry in a skillet on both sides.
Serve the omelette with the fried tomatoes.
I also added some fried courgettes and potatoes.
