Sage leaves become more aromatic when dried, so it's better to harvest them during summer, choosing bigger and health leaves.
During winter dormancy, it's better to not harvest the leaves, using the stored sage instead of fresh one.

Drying sageWash the leaves and dry them with a kitchen towel.
Put the leaves on a large plate or basket, in a dark, not humid and ventilated place.

After a week store leaves (whole or grinded) in a jar or container, away from light and heat sources.
