(Ita) Ricetta: Risotto al radicchio e salvia

SalviaVolevo preparare un risotto in crema di formaggio perfetto per il clima invernale, e ho aggiunto il tocco amarognolo del radicchio, arricchito dal classico accostamento di speck e scamorza, il tutto aromatizzato con la salvia raccolta l'estate scorsa.

Ingredienti
Per 4 persone
1 cespo di radicchio rosso
360g riso
100g speck
100g scamorza affumicata
2 cucchiai salvia tritata
100g fontina o altro formaggio morbido




Preparazione
Tagliare il radicchio a striscioline, quindi sbollentarlo in acqua salata per alcuni minuti. Sciacquare con acqua fredda e scolare bene.
Cuocere normalmente il riso, scolarlo e rimetterlo in pentola con i formaggi, il radicchio, la salvia e lo speck tagliato a striscioline. Mescolare finché il formaggio non è ben fuso e servire caldo.
