Recipe: Potato gateau with coriander
Savory pies and pizza with herbs

Coriander is one of my favourite herbs, and I sow it every September to harvest it throughout autumn and winter.
Potato gateau with coriander
Ingredients
Serves four:
1.5 kg potatoes
500ml milk
200g fontina (or cheddar)
100g Swiss cheese
150g sliced ham
50g butter plus more for greasing
50g grated parmesan cheese
1 bunch fresh coriander
Directions
Boil the potatoes in salted water, peel and mash twice.
Place the potatoes, milk and butter in a pan, cook for a few minutes. Add and stir until the cheeses have melted.
Remove from heat, add diced fontina and Swiss cheese, parmesan, ham cut into strips and chopped coriander, then place in a greased baking tray.
Level with a spatula, cover with pieces of butter and bake at 200 degrees (392 F) for 20-25 minutes, until golden brown.
