Recipe: Pesto and purslane sandwich

PurslaneEvery spring the purslane grows spontaneously in many empty pots and I water it with love and harvest all summer long.


For a quick snack, I spread some buns with a special pesto, enriched with walnuts, gorgonzola cheese and roasted peppers, then I added a nice bunch of purslane.

Pesto with walnuts and gorgonzola


Ingredients
100g basil
70g walnuts
30ml olive oil
100g mild chilies
100g gorgonzola (or blue cheese)
1 clove garlic

Directions
Roast the peppers, peel and remove seeds. Chop all the ingredients in a blender.

Cut sandwiches in half and spread both sides with the gorgonzola and walnuts pesto. Stuff with Brie cheese and plenty of purslane.

I love purslane and buy it at the farmers market when I can find it. This sandwich looks wonderful--I love the pairing with the pesto. Thanks for sharing it with Souper Sundays. ;-)
