A new recipe with my homemade Mediterranean Aromatic Mixture with sage, oregano, rosemary, thyme and other aromatic herbs from my garden.

Autumn chiliI added it to a corn bread served with the Autumn Chili posted a couple of months ago... I admit that I totally forgot to publish this recipe too!

Corn bread with aromatic herbs

Corn bread with aromatic herbs

200g corn flour
180ml water
60g all-purpose flour
2 tbsp mixed herbs
4 tbsp grated Parmesan cheese + 1 to sprinkle
1 tsp baking powder

Dissolve baking powder in warm water.
Mix the two flours with herbs and four tablespoons of Parmesan cheese, then add the mixture of water and baking powder.

Corn Bread with Aromatic HerbsPlace in a square pan 20 cm large and sprinkle the surface with the remaining Parmesan.
Bake in preheated 180° C (356 F) oven for 25 minutes, until golden brown.
