Recipe: Mediterranean Aromatic Mixture

Spices and Aromatic Herbs Mixtures

As mentioned several times, last summer I prepared two mixtures with different herbs, an Asian Aromatic Mixture and a Mediterranean one, similar to Italian seasoning.

Aromatic herbsSome fresh ingredients harvested last August: red chilies, thyme, pennyroyal, sage and chives.


Aromatic herbsI added also bay leaves, mint, marjoram, rosemary, calamint and oregano.


The Mediterranean Aromatic Mixture can be used with many dishes: it's perfect with meat and potatoes, and a pinch added to sauteed vegetables and savory pies will give a very special touch. My three year old son loves it added to omelettes.

Mediterranean Aromatic Mixture


Ingredients
The doses refer to dried ingredients.
4 bay leaves
1 tsp mint
1 tbsp mint
3 tbsp sage (about 35 leaves)
4 tbsp marjoram
4 tbsp thyme
7 rosemary sprigs (2 tbsp )
1 tsp nepetella
1 tbsp oregano greek
3 sprigs oregano (5 tbsp )
1 tbsp chives
4 chilies (remove stems and seeds)

BlendDirections
Chop everything and store in a jar for four to six months.

bellissimo Graziana, mi piace molto!
Ho ancora erbette che spuntano.
Immagino le tue erbe le hai seccate al sole, adesso è un po dura.
POsso seccarle ne micro?
Lunedì ho preparato il pangrattato casalingo come faccio sempre, ma non avevo più erbe secche.
Il rosmarino si secca bene anche in casa, faccio fatica con prezzemolo, menta e salvia. Mi diventano neri e/o marciscono.
Ho provato mettere nel micro e si sono seccate.
Ho tritato tutto insieme al pane ed è venuto buono.
Ovvio non profumato come in estate ma ok.
Ma secondo te, va bene o come potrei fare se no.

Ciao Brii, non essicco mai le erbe al sole ma all ombra perchè diventano scure, cmq le erbe raccolte in inverno sono di sicuro deludenti rispetto a quelle estive.
Prova a asciugarle molto bene e metterle su un vassoio in un posto ventilato e all ombra (per esempio sui pensili della cucina). In alternativa un essiccatore o se non ne hai il microonde non mi convince, è meglio il forno ventilato a temperatura molto bassa. Ciao!

Grazie per questo post e per le note sull essiccazione. Mi hai ricordato che ho voglia di provare ad essiccare le erbe del mio orticello. Certo non ne ho tante e non ho i peperoncini.

Mi fa piacere avere causato questo entusiasmo... ricordate che l estate è il momento più adatto per raccogliere le erbe aromatiche perché (oltre a essere più rigogliose) sono più ricche di oli essenziali e quindi con un aroma migliore.
