Recipe: Paella parellada with coriander
Rice recipes with aromatic herbs
June 09, 2011
I took this picture of paella in Portobello Road: it' really gigantic!
With my fresh coriander I made paella at home... it was smaller than the one of the picture, but really tasty. I choose the recipe of the paella parellada (or of the rich man), that uses artichokes and fish fillets
A tip: this recipe is somehow personalized, the original recipe uses also seafood, chicken and parsley: Paella parellada on Best Cuisine (Il Meglio in Cucina)
Paella parellada with coriander

200g sausage
50g chorizo
400g fish fillet
1 onion
1 red bell pepper
200g tinned tomatoes
1 clove garlic
160g rice
5 artichoke hearts
50g peas
1 tsp turmeric
1 bunch of chopped coriander
Directions
Cut the sausage and chorizo into slices, put in a large pan with a tablespoon of olive oil and cook for five minutes. Remove from pan and set aside.
Cook the fish fillets in the same pan, then set aside.
Chop the onion and fry in the pan for a few minutes.
Add the bell pepper cut into thin slices, artichoke hearts cut into quarters, chopped garlic and chorizo and sausage.
After some minutes add the rice and mix well. Pour a cup of boiling water or broth, peas and chopped tomatoes.
Cook over low heat and add salt.
When cooked, remove from heat and add fish fillets, turmeric and chopped fresh coriander.
Grill in the oven for about ten minutes and garnish with fresh coriander.
