When I published the post Vegetarian Mini Burgers I tought that my onions wouldn't grow too much... The picture shows that I was right.
I know, it's too soon to harvest the onions, but this baby onion was really tasty, and it was perfect in this indonesian recipe.
Corn Patties with Coconut Sauce
200g corn kernels
1 scallion or baby onion
1 piece of ginger
1 clove garlic
50g chickpea flour (besan)
Blend all the ingredients for the patties.
Heat some oil in a pan and dollop spoonfuls of the batter into the pan. Fry and turn gently when golden brown, using a stirring paddle.
Serve with the coconut sauce.
For the sauce:
3 tbsp coconut powder
3 tbsp peanut butter
Put the coconut powder in a bowl, cover with a couple of spoonfuls of boiling water. Add the peanut butter and mix well.
