Recipe: Corn patties with coconut sauce

Baby OnionWhen I published the post vegetarian mini burgers I tought that my onions wouldn't grow too much... The picture shows that I was right.

I know, it's too soon to harvest the onions, but this baby onion was really tasty, and it was perfect in this Indonesian recipe.

Corn patties with coconut sauce

Corn patties with coconut sauce

200g corn kernels
1 carrot
1 scallion or baby onion
1 piece of ginger
1 clove garlic
50g chickpea flour (besan)

Blend all the ingredients for the patties.
Heat some oil in a pan and dollop spoonfuls of the batter into the pan. Fry and turn gently when golden brown, using a stirring paddle.
Serve with the coconut sauce.

For the sauce:
3 tbsp coconut powder
3 tbsp peanut butter

Put the coconut powder in a bowl, cover with a couple of spoonfuls of boiling water. Add the peanut butter and mix well.
