Recipe: Strawberry Morning Glory cakes

Although I always enjoy trying new muffins and minicakes recipes, the Morning Glory muffin is my favorite one, I love how all the different ingredients may be tasted all together in every bite.
Sometimes I change this recipe by adding some new ingredient, like I did for the Morning Glory Muffins with Mint, and this time I used strawberries to garnish.
Strawberry Morning Glory cakes
Ingredients
250g fresh pineapple
2 carrots
1 apple
200g all-purpose flour
160g sugar
1 teaspoon of cinnamon
1 and 1/2 teaspoon baking ammonia
35g coconut flour
50g almonds
2 eggs
50ml corn oil
strawberries to garnish
Directions
Toast and coarsely chop the almonds.
Chop the pineapple pulp, carrots, peeled and cored apple.
Mix flour, sugar, cinnamon and baking soda, then add the chopped almonds.
Combine the chopped fresh ingredients, then the add the oil and beaten eggs.
Spoon the batter into the oiled small pan almost to the brim of each form.
Bake in preheated 180° C (356 F) oven 20-25 minutes.
