Recipe: Strawberry cake with lavender

It's already strawberry season here in Sicily: I bought a box, and even if they disappeared within a few days I could also use them to prepare this cake.

Strawberry Cake with LavenderMy partner loves strawberries and this cake was made for him... then as usual I eat it the most of it!

I used also coconut flour and lavender: they were perfect with strawberries.

Strawberry cake with lavender

350g strawberries
250g all-purpose flour
100g coconut flour
100ml milk
1 tbsp dried lavender flowers
100g butter
175g sugar
1 egg
1 tsp baking powder

Strawberry cake with lavenderDirections
Heat the milk, add lavender flowers and let sit for 10 minutes.
Mix the all-purpose flour, sugar and coconut flour.
Gently melt the butter, and add to the dry ingredients.
Add the well-filtered milk, beaten egg and baking powder.
Pour about 2/3 of mixture into a baking dish and arrange the strawberries, cut into chunks.
Cover with the remaining mixture (adding a few tablespoons of milk if too dense).
Bake in preheated 180° C (356 F) oven for 40 minutes. Serve lukewarm or cold.
