Recipe: Thai prawn toasts with coriander

As I told in a previous post (Fried bananas with coconut and sesame seeds), Thai cuisine uses many herbs and spices that I grow in my garden. One of these is fresh coriander, always perfect on fish dishes.
Thai prawn toasts with coriander
Ingredients
Serves six:
6 white bread slices
150g prawns
300g minced pork meat
1 clove garlic
2 tbsp. fish sauce
1 egg
4 sprigs of fresh coriander
2 tbsp. peanuts oil
Directions
Mince together prawns, pork meat, coriander and garlic. Add the beaten egg and fish sauce.
Remove crust from bread slices and put the prawns mixture on them. Cut into smal triangles.
Heat peanuts oil in a pan. Put the toasts in the pan, with the prawn mixture side down. Cook low heat few minutes, until brown.
Turn the toasts upside down and fry them 1 minute. Serve hot.
