Recipe: Chicken souvlaki with honey and aromatic herbs

I was waiting for some free time at home to prepare homemade skewers (or souvlaki, in this case, since it's a Greek recipe). It is not a long job, but it requires that little bit of serenity that is often missing during the days of work, especially when dealing with a restless baby.
I chose a recipe of chicken flavored with honey, lemon and aromatic herbs, and I served it on pita bread, with Greek salad and feta cheese.

Chicken souvlaki with honey and aromatic herbs
Ingredients
200g chicken breast
2 tbsp lemon juice
2 tbsp olive oil
1 tsp honey
1/2 tsp oregano
1/2 tsp thyme
1 clove garlic
Directions
Cut the chicken into pieces no larger than 2cm and tucked them into skewers.
Mix lemon juice with olive oil, honey, oregano, thyme and chopped garlic. Put the skewers and marinate for a couple of hours, turning them a couple of times.
Grill the souvlaki and serve on pita bread, with feta and greek salad.
The pita bread can be bought or made at home. I've made a simplified version prepared spreading by hand (not with a rolling pin!) circles of pizza dough, which I cooked on a griddle greased with oil.

 Cannellini beans Greek salad
Ingredients
250g cooked cannellini beans
1/4 red bell pepper
thin slices of red onion
juice from half lemon
2 tbsp olive oil
3 anchovy fillets
1/2 tablespoon capers
2 sprigs parsley
Directions
Mix the lemon juice, olive oil, anchovies and capers chopped crumbled into a bowl. Add the sliced onion and cook for a few minutes.
Add the bell pepper cut into strips and parsley. I used curly leaf parsley because it's more decorative, but regular parsley is ok too.
Finally add the well drained cannellini beans.
