This is a variation of the traditional 'salmoriglio' (an oil, lemon and parsley seasoning for grilled fish). I used more delicate herbs, to cover completely the salmon steaks.

Herbed Grilled SalmonHerbed Grilled Salmon

Ingredients
2 salmon steaks
juice from 1 lemon
4 tbsp olive oil
10 thai basil leaves
5 rocket leaves
1 bunch of chervil


Cooking SalmonDirections
Mix the olive oil with lemon juice. Using a rocket leaf, brush often the salmon with this seasoning while you cook it.


HerbsMince together thai basil, rocket and chervil and add to the remaining seasoning. Pour over the salmon steaks and serve immediately.

It sounds good. I like the trick of using the rocket leaves to brush on the seasoning.

I learned the brushing trick from my mother, she uses parsley.
