I use white mint mainly as an herbal tea, because of its refreshing aroma.
It can also be used as an aromatic herb, and it's more strong than regular mint.
Aubergines salad with white mint
Ingredients
1 brinjal (purple aubergine)
1 bunch of white mint
olive oil
salt, pepper
Directions
Cut the aubergines into 1cm slices, put them on a baking pan and bake low heat until tender.
Put the aubergine slices on a serving plate and season with salt, pepper, white mint and olive oil.
