Recipe: Leek savory pie with ginger
Savory pies and pizza with herbs

I tried several times to grow ginger in my garden, simply sowing some pieces of ginger.
Sometimes it become a gorgeous tuft of leaves, but it's too cold here for ginger and each autumn it dies.
So I buy ginger and use it with tea, in a spicy dessert recipes and in many savory recipes. In this pie, ginger is a perfect match for the sweet leeks (which are another of my garden failures ...but I will try again!)
Leek savory pie with ginger
Ingredients
1 leek
3-4 cm ginger
50g diced bacon
50g peas
8-9 slices of sandwich bread
1 tbsp butter, plus additional for greasing
1 pinch of crushed red pepper
2 eggs
100ml milk
4 tbsp flour
4 tbsp grated parmesan
Directions
Fry the bacon in butter for several minutes, until it changes color. Remove from pan and set aside.
Mince the ginger and fry in the same pan of the bacon.
Add the chili and the leek cut into thin slices and cook for a couple of minutes. Add peas and cook for about ten minutes.
Meanwhile, lightly flatten the slices of white bread with a rolling pin to make them more flexible. Arrange in a buttered pan of 30 cm diameter.
Pour the leek, peas and ginger into the pan, and then put the bacon.
Beat eggs with milk, flour and grated parmesan and pour on the pie.
Bake in preheated 180° C (356 F) oven 20-25 minutes.
