Recipe: Tuna and thyme focaccia

Pimento PiquilloThis year my Pimento Piquillo is producing many big and mild pods, perfect to be stuffed or roasted.
I also added them to salads, sauces or sandwiches like this stuffed focaccia.

Tuna and thyme focaccia

Tuna and thyme focaccia

1 large focaccia (25-30 cm)
200g tuna oil
200g mozzarella cheese
2 sweet red chilies
1 tsp thyme

Cut the focaccia in half and place the bottom half on a baking sheet

Stuffed focacciaRemove stalk and seeds from the chilies, and cut into stripes.
Spread the tuna and the chilies on the focaccia.

Stuffed focacciaCover with mozzarella slices and sprinkle with thyme.

Close the focaccia and bake in preheated 180° C (356 F) oven 10 minutes.
