Recipe: Vegetarian Pizza Capricciosa

In Italy every pizzeria has Pizza Capricciosa on its menu, and the original recipe contains ham: I wanted to create a vegetarian version of this famous pizza, using onion instead of ham.
You can't cook a pizza without oregano, and I used the greek oregano harvested last summer. The little white flowers of greek oregano were on the first header of this blog, and its flavour is stronger than regular oregano.
Vegetarian pizza Capricciosa
Ingredients
Serves four:
500g pizza dough
300g fresh peas
1 hard boiled egg
200g fontina or cheddar, sliced
250g tomato sauce
1 onion
20g butter
greek oregano
Directions
Shell peas and wash them. Melt the butter in a frying pan, add the sliced onion and fry 5 minutes. Add the peas, cover with water and cook until tender.
Roll the dough out thin and put in a greased baking pan.
Spread the tomato sauce on the pizza and arrange the peas, sliced egg and cheddar on it.
Sprinkle oregano and bake in preheated 200° C (392 F) oven 30 minutes, until golden brown.
